Chicory, Cicoria Grumolo Bionda. Early rustic plant with small green-blond leaves. Round, light green leaves with a continuous margin arranged in a rosette. Large but very tender root. After cutting, it re-grows quickly. Very resistant to cold. Plant in October, harvesting only the tops as the cute rosettes emerege in spring. Leaves form a characteristic rosette shape in the Spring. Prolific seeds. This is milder than arugula, juices fine if cut into 1/2" pieces so as not to clog the juicer expeller. It obviously can be braised, minced for soups or rice
