Tomato: Pomodoro Principe Borghese  Italian heirloom bred for sun-drying, maintains more flavor when dried  Small indeterminate plants bear prolifically and must be staked or caged. Tomatoes set on clusters of 7-10 fruit each weighing about 2 oz. They hold extremely well on the vine. 72 days. Eat fresh in salad or dry for sun-dried tomatoes. They also make outstanding oven-roasted tomatoes; slice in half, drizzle with some olive oil, bake at 250°F until mostly done, sprinkle with fresh basil, oregano, etc. Eat as a contorno or freeze  Eat them right out of the garden, use in an oven-roasted sauce an uncooked sauce and a quick sauce. Also, in tomato salads or dehydrate these and then use whole, or grind and add to soups, sauces, salad dressing or bruschetta. One of my favorite tomatoes

Principe Borghese Tomato - The Little Secret from Italy!  Small plum shaped fruits, averaging 1 - 2 oz. grow in clusters, very meaty with little juice and few seeds. The definitive classic tomato for sauces and sun drying, traditionally grown in the south of Italy.  Italian heirloom bred for sun-drying, this low moisture variety maintains more flavor when dried than do other varieties. Slightly oval, 1 oz fruits. Prized in Italian cooking when reconstituted in olive oil, they can also be crushed into small flakes to quickly thicken a thin sauce while adding a rich tomato flavor

Deep rich classic sun dried tomato taste. They are also excellent for eating fresh.

Principe Borghese is about the size of an egg and at the end of the season you would cut the plant at the bottom and hang the green fruits somewhere cool, dark and airy like a garage, shed with a small window or barn. The fruits will shrivel and concentrate their flavour like a sunblush tomato and can be pulled till almost Xmas. They’ve been used like this for generations and are delicious served with goats cheese with toasted pine nuts and a drizzle of lemon oil, in salads, on pizze or in pasta
