Wild Fennel Finocchio Selvatico
Wild Fennel is a perennial plant with few leaves, smooth stalk and yellow flowers. Both the leaves and dried seeds can be used to season meat and vegetables. It seems to manage to overwinter and come back each year. Good for Pasta con le Sarde, Fennel Sausage and Fritters. But most of all it makes a great finocchietto liquer. Pollinators love it too.The seeds can be used to season bread, biscuits, and baked salmon to give a distinctive fennel flavor. Fennel seeds also are used in many brine recipes.
